Carrot Cake

Granted, the name isn't too becoming, but give this carrot cake recipe a try! You might just love it! We did!

INGREDIENTS:

  • 2 cups white sugar

  • 2 cups all-purpose flour

  • 1 teaspoon salt

  • 2 teaspoons ground cinnamon

  • 1 teaspoon baking soda

  • 1 1/2 cups vegetable oil

  • 4 eggs

  • 3 cups grated carrots

OPTIONAL:

  • 1 3 ounce package cream cheese

  • 1/4 cup heavy whipping cream

  • 1 teaspoon vanilla extract

  • 1 1/2 cups sifted confectioners' sugar

HOW TO MAKE:

  1. Preheat oven to 350 degrees Fahrenheit

  2. Grease 9 or 10 inch tube pan

  3. In large bowl, combine sugar, flour, salt, cinnamon, baking soda, and vegetable oil

  4. Add egg

  5. Beat

  6. Add egg

  7. Beat

  8. Add egg

  9. Beat

  10. Add egg

  11. Beat

  12. Add carrots

  13. Mix

  14. Pour into prepared pan

  15. Bake for 1 hour and 20 minutes

  16. Slice into desired shapes

OPTIONAL: (FROSTING)

  1. Combine cream cheese and cream into an electric mixer

  2. Blend

  3. Add vanilla and confectioners' sugar

  4. Spread onto top of cake (cake may be cool or warm)

**Be careful with the ingredients used. Always double check the ingredient labels of your products, as you will find that some brands do not make these ingredients free of nut exposure.
