Carrot Cake
Granted, the name isn't too becoming, but give this carrot cake recipe a try! You might just love it! We did!
INGREDIENTS:
2 cups white sugar
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 1/2 cups vegetable oil
4 eggs
3 cups grated carrots
OPTIONAL:
1 3 ounce package cream cheese
1/4 cup heavy whipping cream
1 teaspoon vanilla extract
1 1/2 cups sifted confectioners' sugar
HOW TO MAKE:
Preheat oven to 350 degrees Fahrenheit
Grease 9 or 10 inch tube pan
In large bowl, combine sugar, flour, salt, cinnamon, baking soda, and vegetable oil
Add egg
Beat
Add egg
Beat
Add egg
Beat
Add egg
Beat
Add carrots
Mix
Pour into prepared pan
Bake for 1 hour and 20 minutes
Slice into desired shapes
OPTIONAL: (FROSTING)
Combine cream cheese and cream into an electric mixer
Blend
Add vanilla and confectioners' sugar
Spread onto top of cake (cake may be cool or warm)
